The Art of the Slow-Cooked Ragù

A great ragù cannot be hurried. It begins long before service, when the kitchen is quiet and the only sound is the low bubble of a heavy pot on the back of the stove.

We start with a soffritto cooked slowly until it almost disappears, then build layer upon layer — meat browned in batches, a splash of wine reduced to nothing, tomatoes broken down over hours. Time does the work that no shortcut ever could.

By the time it reaches your plate, the sauce has become something else entirely: glossy, deep and quietly complex. That is the reward of patience, and it is the philosophy behind everything we cook at Terra.
